4 Ingredients: Bacon & Pea Soup

With all the flavour of traditional pea & ham soup but with a fraction of the effort and cooking time!

Ingredients:

400g bacon rashers, chopped
1 onion, roughly chopped
500g frozen peas, thawed (reserve a few for garnish)
1 litre vegetable stock

Directions:

1. In a large saucepan, fry the bacon until golden. Move to the side and in the oil gently fry the onion until just translucent.

2. Add the peas and vegetable stock. Bring to the boil, reduce to a simmer, and cook until the peas are tender, 3 to 5 minutes.

3. Using a handheld blender, blend the soup until smooth.

4. To serve, pour the soup into a bowl and garnish with a few whole peas and a little crispy bacon.
