Adelaide Hills Spanish Tapas: Pinot Noir Mushroom
Insipred by the wine culture of the Adelaide Hils these divine pinot noir mushrooms are packed full of flavour. This is a great appetiser combining garlic, thyme and pinot noir to create a very special taste sensation you simply must try.

20 g ( ¾ oz) butter
2 garlic cloves, finely chopped
120 g (4 ½ oz) button mushrooms (about 12)
125 ml (4 fl oz/ ½ cup) pinot noir
125 ml (4 fl oz/ ½ cup) chicken stock
3 thyme sprigs, plus extra to serve
Melt the butter in a medium frying pan over high heat. Add the garlic and mushrooms and sauté for 3 minutes. Add the pinot noir, stock and thyme and simmer gently for 15 minutes, or until the liquid is absorbed and the mushrooms are tender. Serve at room temperature, topped with the extra thyme sprigs.
