Low-carb tropical pizza

Ingredients:

2 teaspoons (10ml) tomato paste
15g pineapple, fresh
15g semi dried tomatoes, in oil
25g eggplant
1 teaspoon (5ml) olive oil spray
5g basil, fresh
10g parmesan cheese, shaved
25g black olives, pitted
1 (205g) cauliflower pizza crust - recipe here 

Directions:

1. Preheat oven to 220°C/425°F/gas mark 7. Place a cauliflower pizza crust on the pizza tray and spoon the tomato paste over the crust.

2. Slice the eggplant lengthways and spray both sides with the oil. Grill on the bbq or in a sandwich press until brown. These methods use less oil than frying.

3. Peel the pineapple and cut into bite size pieces. Do the same with the cooled eggplant. Top the crust with the pineapple, eggplant, semi dried tomatoes, pitted olives and the shaved parmesan. Place in the oven until the pizza is brown and bubbly, about 10 minutes. Scatter with basil and slice.
